Roasted Broccoli Tomato and Feta Pasta

THIS ROASTED BROCCOLI, TOMATO AND FETA PASTA IS SO EASY TO MAKE YOU WON’T KNOW WHAT TO DO WITH YOURSELF, AND IT’S PACKED WITH PROTEIN AND VITAMINS FOR YOU AND YOUR FAMILY TOO.

By roasting the ingredients in the oven beforehand it free’s you up to do other things, until it’s time to cook the pasta, and you can make it for less than £5 using the ingredients from most supermarkets - AND its vegetarian. This’ll be a firm family favourite in no time at all!

Serves 4.

You Will Need:

150-200g cherry tomatoes

400g frozen of fresh broccoli

1 red onion (white onion will do)

1 pack of Greek feta

500g of wholemeal pasta (your choice of shape)

A couple of glugs of olive oil.

2 tsp of garlic granules

Salt and pepper

Roasted Broccoli Tomato and Feta Salad

METHOD:

1. Preheat the oven to 180C/340F

2. Combine the broccoli, tomatoes, onion, garlic granules and olive oil in an ovenproof dish, making sure everything is mixed together evenly. Add a dash of salt and pepper at this point.

3. Cover the top of the dish in foil then place into the oven for 45 mins.

4. After 30 minutes of cooking, remove the foil, mix up the broccoli etc and put it back in for the remaining 15 minutes.

5. 10 minutes before the roasted veggies and feta are ready, get the pasta on.

6. Remove the dish from the oven and use a fork to break up the feta and combine with the veggies until everything is a creamy, veggie consistency. Take a ladle full of pasta water and add it to the veggie/feta mix.

7. Remove the pasta from the saucepan, drain and combine with the broccoli, tomatoes and creamy feta etc in a large serving dish or bowl.

Serve.
