Cucumber and Red Onion Summer Salad

This super easy cucumber and red onion salad is an absolute cracker; perfect for barbecues or just a regular summer afternoon lunch with the family. It’s also a nice healthy alternative to potato salad, and a perfect option for those watching the carbs.

You Will Need:

2 Cucumbers, sliced

1 medium red onion, sliced

1 medium pot of Greek yoghurt

Roughly 8 stalks of coriander, washed and leaves removed from the stalk

2 tablespoons of white wine or apple cider vinegar

2 teaspoons of garlic powder

salt and pepper

Cucumber and Red Onion Summer Salad

METHOD:

Slice your cucumbers into your favourite shape and place into a large mixing or salad bowl. Slice the onion and add it to the bowl, then remove your coriander leaves from the stalks and finely chop before adding them too.

Add your Greek yoghurt, along with the white wine/apple cider vinegar, garlic powder and salt and pepper to taste.

Mix the ingredients thoroughly for two minutes or so, using two tablespoons to ensure all ingredients are covered with the yoghurt and coriander mixture.

Cover and refrigerate for an hour at least, to let the flavours permeate through the salad.

Serve.
